HOMEMADE BISCUIT MIX 
With recipes use:

4 tsp. salt
1 1/2 c. shortening
1/4 c. double action baking powder

Sift baking powder and salt with 2 cups flour. Add remaining 6 cups of flour, sift again and stir. Drop shortening by spoonsful on top of flour mixture and cut in with 2 knives or mix at low speed in mixer until mix looks like corn meal. Store in covered container. Makes 11 cups. Do NOT refrigerate. NO preservatives. Recipe may be halved for one person.

BISCUITS:

2-1/2 c. biscuit mix
2/3 c. milk

Stir milk into mix. Turn onto pastry cloth and knead gently 2 or 3 times. Roll out to 1/2 inch thick. Cut and bake at 425 degrees for 12 to 15 minutes.

BISCUIT MIX WAFFLES:

2 eggs
1-1/4 c. milk
2 tbsp. melted butter
2 tbsp. sugar
2 c. biscuit mix

Beat eggs, add sugar and milk. Stir in biscuit mix. Add butter. Bake in hot waffle iron until steaming. Serves 3 people.

BISCUIT MIX PANCAKES:

2 eggs
1 c. milk
1 tbsp. sugar
2 c. biscuit mix

Add sugar, milk and eggs to biscuit mix and stir until only dampened. Bake on hot griddle. Turn when bubbly. Makes 16 medium size pancakes.
