HOMEMADE BISCUIT MIX 
5 lbs. sifted all-purpose flour
3/4 cup baking powder
3 tbsp. salt
1 tbsp. cream of tartar
2 lb. shortening

Sift dry ingredients together twice. Cut in shortening until mixture resembles coarse cornmeal. Store at room temperature in a covered container.

When ready to make biscuits, measure 3 cups mix and add milk. Mix and knead lightly. Roll to about 1/2 inch thickness. Cut in 2-inch rounds and bake at 400°F for 10 minutes.
