PUMPKIN CAKE (OR BREAD) 
4 eggs
2 c. white sugar
2 c. self-rising flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. baking powder
1 c. Wesson oil
1/2 tsp. salt
1 c. canned pumpkin (we use a whole can)

Cream sugar and eggs and oil together. Sift dry ingredients and add. Beat for 3 minutes. Add pumpkin last. Bake in 3 round pans for 30 minutes. For bread use loaf pans.

ICING:

1 stick butter
1 (8 oz.) cream cheese
1 box powdered sugar
1/2 tsp. vanilla
1 c. pecans (chopped)
Orange cake coloring
