TOURTIERE 
1 1/2 c. celery, chopped very fine
3 lbs. pork, ground, not too finely
2 lbs. beef, ground, not too finely
3 lg. onions, chopped very fine

Add a little water and cook 2 hours very slowly. Season with salt and pepper, 1/4 teaspoon cloves, 1/4 teaspoon cinnamon and a little sage. Put into 2 crusts and bake until brown at 375 degrees. Makes 5 pies.
