SWEET AND SOUR SATE 
2 to 3 lb. lean beef or lamb
1 tsp. cumin
3 cloves garlic
5 shallots
5 dried red chilies
3 tbsp. soy sauce
1 tbsp. tamarind water
1 to 2 tbsp. brown sugar
Salt to taste

Cut meat into bite-sized piece. Pound or grind spices and mix with soy sauce, tamarind water, brown sugar and salt. Marinate meat in mixture for at least 2 hours. Thread meat pieces on small skewers.

Grill over charcoal basting often until meat is tender.
