CORN CAKES 
2 eggs
1 tsp. baking soda
1 1/2 c. white cornmeal
2 tbsp. melted bacon grease
2 c. buttermilk
1 tsp. baking powder
1 tsp. salt

Put all ingredients in a bowl and beat with electric mixer 1 1/2 to 2 minutes at top speed. If mixed by hand, beat eggs before adding. Batter will be thin. Cook on hot griddle that is generously greased with bacon grease.
