FOUR INGREDIENT PEANUT BUTTER
COOKIES
 
1 c. peanut butter, smooth or crunchy
1 egg
1 tsp. vanilla
1 c. sugar

Combine above ingredients. Drop by spoonful into lightly greased cookie sheet. Bake at 350 degrees until done (about 5-7 minutes).

This are great, they are a little sweet, so next time I'll cut the sugar down a bit, I used 1/2 regular sugar 1/2 brown sugar that gave it a bit more flavor, and added a tsp of cinnamon.

I used 1/2 c. sugar and added 1/2 c. dry flaked coconut. They tasted like the chic o stick candy. Less sugar is better and big balls flattened with a fork for 7 mins. put in fridge for chewy cookie.

Just made this recipe and it is awesome! Hubby had accidentally picked a 40 oz jar of Reduced Fat Peanut butter which I do not like. So I was worried about what to do with the peanut butter because it is not for my PB & J's. Made the first batch with an added 1/2 stick of butter. DID NOT need it, but it still worked, next batch with one forth cup of AP Flour, worked again but the point is I DID NOT NEED TO MONKEY WITH THE RECIPE AT ALL. Last batch was just per recipe and they are delish! A keeper!

I have used this recipe for years, the only reason I did not give out a five is because I had to change the oven temp to 425°F. That is the temp I have used all along. Also if you let the cookies cool for a few minutes before removing them from the cookie sheet they won't fall apart so easily.

I don't understand these great reviews. I tried the recipe but they were flat, burned on the bottom, then as they cooled they got hard around the edges and toffee like in the center. I baked them for the time specified. What could I have done different? But the taste was good, I mean, how can you go wrong with peanut butter and sugar??

Being gluten and dairy free these are great. Try using parchment paper and they won't burn on the bottom. Leave them on the cookie sheet to cool for 2 minutes then remove to a rack.
