HIGH FIBER LOW CALORIE BRAN
MUFFINS
 
1 c. whole wheat flour
1 tsp. baking soda
1 1/2 c. all bran
1/2 c. raisins; optional
1 tsp. pure vanilla
1 egg
1/2 c. honey
3/4 c. skim milk
2 tbsp. safflower oil

Mix together dry ingredients, moisten with egg, honey, milk, and oil. Stir only to blend.

Place one-ounce scoops of mixture into well greased muffin tins. Bake at 400°F for 20-30 minutes. Makes 15 (not 12). This is important for calorie count.

To make this recipe even less calories and VERY tasty - subsitute the 2 tablespoons of oil for 2 good rounded tablespoons of THICK no fat GREEK yogurt, subsitute the whole egg for 1/4 cup egg beaters, use dry no fat milk (mix with water).

I sprayed my popover pan with the PAM/olive oil spray (ie. no calories). I made ONLY 6 muffins - for a VERY VERY LOW CALORIE Breakfast muffin - nice and hearty, TASTY and with substance - My changes in the recipe made this recipe more wholesome, less calories, VERY delicious with 2 cups of hot green tea. The next time I may do some substituting with some of the honey. Any ideas - perhaps some splenda, stevia --
