TOMATO-BROCCOLI CHICKEN (Low
Calorie)
 
2 lg. chicken breasts, skinned, split and boned
Salt and pepper
1/4 c. chopped onion
2 tbsp. butter
1 (10 oz.) pkg. frozen cut broccoli, thawed
1 tsp. lemon juice
3/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. dried thyme, crushed
3 med. tomatoes, cut in wedges

Sprinkle chicken lightly with a little salt and pepper. Cut chicken into 1/2 inch side strips.

In medium skillet cook chicken and onion in butter until chicken is no longer pink. Stir in broccoli, lemon juice, the 3/4 teaspoon salt, pepper and thyme. Cover; simmer 6 minutes. Add tomatoes. Simmer, covered, 3-4 minutes more. Makes 4 servings.
