SAUSAGE-GRITS CASSEROLE 
1 lb. pork sausage
3 c. cooked grits
2 1/2 c. (10 oz.) grated Cheddar cheese
3 tbsp. butter
3 eggs, beaten
1 1/2 c. milk
1/4 c. pimento (optional)
1/4 c. parsley (optional)

Cook sausage until brown. Drain well. Put in 9x13 inch baking dish. Prepare grits according to the directions on the box. Stir cheese into hot grits until melted. Add butter, eggs, and milk. Pour over sausage. Bake 1 hour at 350 degrees. Serves 12.
