SAUSAGE GRITS CASSEROLE 
1 lb. hot bulk sausage
1/2 c. chopped onion
1 c. raw grits
8 oz. sharp Cheddar cheese, grated
2 eggs, beaten
1/2 tsp. salt
Pepper to taste
1/4 c. grated sharp Cheddar cheese

Preheat oven to 350 degrees. Brown sausage and onions; drain well on paper towels. Cook grits according to package directions. Combine onion, sausage, grits, 8 ounces Cheddar cheese, eggs, salt and pepper. Pour into 9 x 13 inch buttered baking dish. Top with remaining 1/4 cup cheese. Bake for 1 hour.
