LUSCIOUS LEMON POUND CAKE | |
1/2 c. butter (diet or low cholesterol) 1/2 c. shortening 2 c. sugar 5 eggs 1 (8 oz.) container sour cream 1/4 c. milk Juice & rind of 1 fresh lemon 3 c. all-purpose flour 1/2 tsp. baking powder 1 tbsp. lemon extract 1 tsp. vanilla extract Cream butter and shortening; gradually add sugar, beating well at medium speed. Add eggs one at a time, beating after each addition. Combine sour cream, lemon juice and milk; stir until smooth. Combine flour and baking powder. Add alternately to creamed mixture, beginning and ending with flour mixture. Add flavorings and lemon rind. Bake in a greased and floured 10 inch tube pan at 350 degrees for 1 1/2 hours. Calories 240 per slice. |
