APRICOT BARS 
3/4 c. butter
1 c. sugar
1 egg
2 c. flour
1/4 tsp. baking powder
1 1/3 c. shredded coconut
1/2 c. chopped walnuts
1/2 tsp. vanilla
1 jar (12-16 oz.) apricot preserves

In a large mixing bowl cream butter and sugar. Add eggs; mix well. In separate bowl, combine flour and baking powder. Gradually add to the butter mixture. Add coconut, walnuts and vanilla; mix thoroughly.

Press 2/3 of dough into a greased 13 x 9 inch baking pan. Spread with preserves; crumble remaining dough over preserves. Bake at 350 degrees for 30- 35 minutes or until golden brown. Cool in pan on wire rack. Cut into squares. Yield 36 bars.
