BROCCOLI VINAIGRETTE 
2 lbs. broccoli
2 tbsp. red wine vinegar
Salt and pepper
6 tbsp. olive oil
2 tbsp. chopped red onion

Trim tough stems from broccoli. Cook broccoli in salted water until tender, 10-15 minutes. In small jar, combine vinegar, 3/4 teaspoon salt and 1/4 teaspoon pepper and shake. Add oil and shake again. Toss broccoli, chopped onion and red wine vinaigrette together. Serve chilled. 4 servings.
