"COMPANY'S COMING" EASY POT
ROAST
 
4-5 lb. top or bottom round roast
6-8 med. white potatoes
Bunch carrots
4-6 white onions
2 cans mushroom soup
1 pkg. dried onion or mushroom soup mix
Salt & Pepper

Preheat oven to 350 degrees. In large aluminum roasting pan place roast. Cover with both cans of soup and soup mix. Pour 3 soups cans of water. Over this set whole potatoes (skin on) and peeled onions (whole or halved) around roast. Place peeled long carrots around on top of vegetables. Season to taste. Cover and cook 2 1/2 to 3 hours. Serve potatoes as you would a baked potato with butter, cheese and sour cream, pouring gravy from roast on top.
