FRAN'S POTATO SALAD 
6 lg. Idaho potatoes
6 hard-boiled eggs
1/2 c. finely chopped onion
1/2 c. fresh parsley, finely chopped
3/4 c. mayonnaise (or more, if too dry) Hellmann's Light
Salt to taste
Lots of black pepper

Boil potatoes in skin, cool, peel and dice. Add onion, parsley, chopped eggs, mayonnaise, salt and pepper. Mix well.
