STIR FRIED CHICKEN AND MUSHROOMS 
2 tbsp. peanut oil
4 garlic cloves minced fine
1 tbsp. fresh ginger minced
1 whole boneless chicken breast cut into strips
8 oz. mushrooms, sliced
1 jalapeno chili, minced
4 green onions, sliced
2 tbsp. soy sauce
Steamed rice

Heat oil in wok or heavy large skillet over medium high heat. Add garlic, and ginger and cook about 30 seconds. Add chicken, mushrooms and chili and fry until chicken is cooked through, stirring constantly, about 5 minutes. Remove from heat, mix in onion and soy sauce. Serve with steamed rice.
