PECAN DELIGHTS 
4 egg whites
1 3/4 tsp. baking powder
1/4 tsp. vanilla
1 c. sugar
2 c. saltine crackers, coarsely crushed
3/4 c. chopped pecans
Sweetened whipped cream or frozen whipped dessert topping, thawed
Pecan halves

Beat egg whites, baking powder, and vanilla until soft peak forms. Add sugar, 1 tablespoon at a time; beat until stiff peaks form. Fold in crackers and nuts. Spread mixture in a greased pie plate and bake at 325 degrees for 35 to 40 minutes or until lightly brown. Top with whipped cream.
