BIRTHDAY CAKE 
1 1/2 c. sugar
2 c. flour
1/2 c. shortening
2 eggs
1 c. buttermilk
3 tbsp. hot coffee
4 tbsp. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 tsp. red food coloring

Cream sugar and shortening. Add eggs one at a time and beat well after each addition. Sift flour, salt and soda together and add alternately with buttermilk.

Melt cocoa in hot coffee and add mixture and red food coloring to batter. Beat for 2 minutes and pour into 2 (9-inch) pans. Bake at 350 degrees for 35-40 minutes. Frost with Seven Minute Frosting.
