ZUCCHINI PARMESAN 
4 zucchini (about 5 inches long)
2 to 3 garlic cloves, mashed
3 tbsp. butter
Salt & pepper
Dash of oregano
2/3 c. grated Parmesan or Romano cheese

Steam whole zucchini until crisp-tender, about 8 to 10 minutes. Remove from pan and slice lengthwise about 1/4 inch thick. Reheat broiler, placing rack 5 inches from heat source. Mash garlic with butter and season lightly with salt, pepper and oregano. Spread mixture on zucchini slices and top with cheese. Place on baking sheet and broil until golden. Serves 4.
