ZUCCHINI PARMESAN 
2 eggs, beaten
2 c. bread crumbs
2 tomatoes
1 lg. onions, sliced in rings
1 pkg. fresh mushrooms, sliced
2 zucchini, sliced
Garlic salt
Salt and pepper
12 oz. Mozzarella, shredded

Beat the 2 eggs. Dip zucchini sliced in egg and bread crumbs twice. Brown slices in butter over medium heat. Layer zucchini, tomatoes, mushrooms, onions in a 2 quart casserole. Season with garlic salt, salt, and pepper. Cover with cheese. Continue layering ingredients until you run out. Bake at 350 degrees for 30-45 minutes.
