PINEAPPLE COFFEECAKE 
1/2 lb. butter
4 eggs
3 c. flour
1 c. buttermilk
1 tsp. baking soda
1 c. pineapple preserve (use a little more)
2 c. sugar
1 tsp. cinnamon
1 tsp. vanilla
1 c. or more pecans

In bowl melt butter (before you do anything, take 1 cup buttermilk and put in baking soda). Cream sugar, eggs, and butter and add pineapple preserves. In separate bowl put 3 cups flour, cinnamon and vanilla; mix well. Mix egg mixture with flour and add buttermilk mixture; add pecans. Use tube pan or Bundt pan, grease and flour. Bake for about 1 hour at 350 degrees; put loose piece of foil on top of pan - after it rises, take foil off.
