STRAW MUSHROOMS AND BABY CORN 
1 clove garlic, crushed
1/2 tsp. grated fresh ginger
1 tbsp. peanut oil
1 (15 oz.) can baby corn, drained
2 tbsp. oyster sauce, essential to bring out the flavor
4 tbsp. chicken broth
1/8 tsp. sugar
1 (15 oz.) can straw mushrooms, drained

Make sure you use straw mushrooms, NOT ANY OTHER KIND. These are found in cans in supermarkets, right next to the cans of baby corn ears.

In a hot wok, 375 degrees or when a drop of water fizzles, stir fry the garlic and ginger in the oil for a minute or two. Add the corn and stir fry until hot. Add the oyster sauce, chicken broth, and sugar. Stir and toss. When the mixture is hot, add mushrooms and stir gently until all the food is heated through. Serve with hot rice.

For a complete meal, you can also add some pieces of chicken or fish or scallops. Serves 3-4.
