SHRIMP CREOLE 
1 1/2 c. butter or oil
1/2 chopped onion
1 clove garlic, minced
1/2 c. chopped green peppers
2 lg. cans tomatoes, blended
2 tsp. salt
1/8 tsp. pepper
1/8 tsp. cayenne pepper
2 bay leaves
2 cans tomato sauce
1 can water
Shrimp (1 lb.), peeled
Rice, hot cooked (3 c.)

Heat oil or butter. Add onions, garlic and peppers. Cook until soft. Blend tomatoes in blender. Add to above mixture. Add remaining ingredients. Shell, clean and boil shrimp 5-10 minutes. Add to tomato mixture. Cover and cook 10- 15 minutes longer. Remove bay leaves. Serve at once over rice.
