SPRING ZUCCHINI BREAD | |
3 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1 c. chopped walnuts or pecans 3/4 c. vegetable oil 3 c. grated zucchini, unpeeled 3/4 c. golden raisins, optional 3 eggs 2 c. sugar 2 tsp. vanilla Combine dry ingredients. Mix eggs, sugar, oil, vanilla and zucchini. Add to dry ingredients along with nuts and raisins. Stir until moistened. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Cool 10 minutes and remove from pan. |
