SANTA ANNA PINTO BEANS | |
Soak 2 cups dried pintos in 1/2 teaspoon baking soda and water overnight (covered). Drain; add water to cover. Cook (adding no seasonings) until soft. If more water is needed, add boiling water ONLY. When beans are tender, chop 2 strips bacon in pieces; fry to crisp. Add to beans. Add 1/4 cup ketchup, 1/2 cup chopped onion, 1 tablespoon brown sugar, and salt and pepper to taste. Boil slowly 10 minutes. |
