PINTO BEAN PIE 
1/2 c. sugar
1 c. brown sugar
1 heaping c. of mashed pinto beans
1/2 c. water
2 eggs, beaten
Unbaked pie shell

Blend sugars, eggs and butter until creamy. Add pinto beans and blend well. Pour into deep 9 inch unbaked shell (I use a glass oven proof pan). Allow room for filling to cook. Bake in 375 degree oven for 20 minutes, then at 350 degrees for an additional 25 minutes or until knife inserted comes out clean.
