CHILI CON QUESO 
1/4 c. chopped onions
1 tbsp. butter
1/2 c. mild salsa
1/4 c. diced green chilies
2 c. shredded mild cheddar cheese
1/3 c. heavy cream

In skillet, cook onions in butter until tender. Add salsa, chilies and cheese. When cheese is almost melted, stir in the cream. Heat thoroughly, but do not let boil. Serve warm with tortilla chips. VARIATION: May use hot salsa and sharp cheddar.
