CHILI CON QUESO 
1 c. minced onion
2 tbsp. butter
1 (28 oz.) can tomatoes
1 (4 oz.) can peeled green chilies
2 tbsp. butter
2 tbsp. flour
1 c. cream
Salt & pepper to taste
Dash of hot sauce
1/2 lb. Jack or cheddar cheese

Cook onion in butter until soft. Add tomatoes; simmer until thick. Chop chilies; remove seeds. Add to tomato mixture. Melt butter in saucepan; add flour, mixing until smooth. Add cream; cook until thickened. Combine with tomato mixture. Add salt, pepper and hot sauce. Add finely diced cheese; stir until partially melted. Pour in chafing dish. Serve with fried tortillas, corn chips, cubes of bread or meatballs on toothpicks.
