4 chicken breasts
1 c. zucchini
1/2 c. chopped onion
2 cloves garlic, chopped
1/2 tsp. cumin
1 c. eggplant in chunks
2 red peppers, sliced
1 pkg. baby carrots
2 c. white wine
1 c. mushrooms

Brown chicken lightly, saute onion and garlic with zucchini and eggplant, red pepper and mushrooms. Once sauteed add wine and simmer for 45 minutes. Can be served over rice or noodles.
