SUMMER SQUASH CASSEROLE 
3 lbs. summer squash
1/2 c. chopped onions
1/2 c. cracker meal or bread crumbs
1 tsp. salt
1/2 tsp. pepper
2 eggs
6 tbsp. melted butter

Wash and cut squash. Boil until tender, drain. Add all ingredients (3 tablespoons butter) except crumbs and butter (3 tablespoons saved). Pour into buttered baking dish. Sprinkle with crumbs and drizzle with melted butter. Bake at 375 degrees until set.
