POTATO SOUP (CROCK POT) 
1/2 lb. bacon
1 sm. onion
6 med. potatoes
1 (13 oz.) can Carnation milk
1/3 c. butter
1 tsp. salt
1/2 tsp. pepper
5 c. water

Chop bacon and onion. Brown bacon and onion in skillet. Remove from pan and put in crock pot. Peel and cube potatoes. Put in crock pot and add water, salt, pepper and butter. Cook covered 2 hours on low heat until potatoes are cooked. Add 1 can Carnation milk during last 1/2 hour. Garnish with chopped chives. Serves 6.

Great recipe! I did chicken broth instead of water and did extra on the spices because I like extra flavor. The soup was fantastic! The only problem is that 2 hours on low heat is nowhere near long enough. I did one hour on low, then 2 hours on high and the potatoes were still not cooked through. Next time I'll try 6 hours on low.
