2 jack rabbits (optional)

Cut elephant into small pieces, this should take about 2 months. Brown in skillet, make enough gravy from drippings to cover. Cook over mesquite fire 2 weeks until tender. Serves 3, 836 people, if more are expected add the 2 rabbits, but do this only if you must as most people don't like hare in their food.

This was popular in my grandfathers day. That's why it's hard to find elephants in Texas today. But adding hares was so unpopular that most cooks didn't so we still have many jack rabbits.
