POTATO SCONES | |
2 c. smoothly mashed potatoes (instant potatoes work quite well) 1 c. flour 2 tbsp. shortening 1 tsp. salt (if potatoes not previously salted) Blend all together by hand, rubbing in butter. Divide dough in 8 pieces, or more if smaller scones desired. Roll each piece into a thin circle. Cook quickly, about 2 minutes each side. Place in clean towel to keep warm. Butter and roll up to eat. Good with Gouda or other plain cheese. Also good fried with bacon, if you have no 80s style conscience. |
