CORN CASSEROLE 
1/2 medium. green pepper
1 large onion (saute in butter)
1 pkg. Jiffy corn muffin mix
1 small jar minced pimento
1 can whole kernel corn and liquid
1 can cream style corn
1/2 pt. sour cream
1 cup grated cheese
3 eggs, beaten

Mix eggs, corn, muffin mix and pimento.

Pour into 9x13-inch pan. Cover with sautéed pepper and onion. Spoon on sour cream and cheese.

Bake 30 minutes at 400°F.
