ALICE WALTERS WHOLE BAKED GARLIC 
4 whole heads garlic
4 tbsp. butter
1/4 c. olive oil
Salt & pepper to taste

Remove outer layer of skin, exposing cloves. Place in baking dish, dot with butter and pour oil over the heads. Bake, uncovered, in a 200 degree oven for 30 minutes. Add 1/2 cup water, cover and bake 1 1/2 hours longer, or until soft. Squeeze garlic puree from cloves and spread on toast, meat or vegetables.
