CUCUMBER SANDWICHES 
3 cucumbers
1/2 onion
4 (8 oz.) pkg. cream cheese
Salt and pepper to taste
4 loaves thinly sliced bread
1 c. Miracle Whip

Peel cucumbers; grate with onions over a colander so juice can drain off. Combine with Miracle Whip, cream cheese and seasonings. Remove crusts from bread; spread the mixture on half the slices. Cover with remaining slices. Cut sandwiches to any size desired. To keep fresh, place on a baking sheet with waxed paper between each layer and over top. Cover with a damp towel. Refrigerate until ready to serve. Makes about 4 dozen sandwiches, if they are cut in half. It is always good to remember if you wish to hold sandwiches, soften butter and spread lightly on bread. This keeps the filling from seeping through and making the bread soggy.
