RHUBARB CRISP 
6 c. diced, fresh rhubarb (about 2 lbs.)
8 slices, firm textured white bread, cubed
1 3/4 c. sugar
1/4 c. butter, melted
1/2 tsp. cinnamon

Combine rhubarb, bread cubes, sugar and butter. Spread mixture in a greased 9"x13" pan. Sprinkle with cinnamon. Bake in 350 degree oven for 40 minutes. Serve warm or cold. 12 servings.
