POTATO CHOWDER 
2 c. uncooked, cubed potatoes
1 tbsp. chopped onion
1 clove garlic, minced
2 tbsp. fat
1 c. canned tomatoes
1 can condensed cream of chicken soup
1 tsp. salt
1/2 tsp. pepper
1 c. light cream

Cook potatoes, onion and garlic in hot fat until potatoes and onions are transparent (not tender), stirring occasionally.

Add tomatoes, chicken soup and seasonings. Cover. Simmer until potatoes are tender, about 25 minutes. Add cream. Serve at once.
