HIGH MERINGUE FOR PIE | |
1 tbsp. cornstarch 2 tbsp. cold water 1/2 c. hot water 3 egg whites 9 tbsp. sugar Dissolve cornstarch in cold water, add hot water and cook until thick and clear, about 5 minutes. Cool. Beat egg whites to a coarse foam, add sugar gradually and beat until stiff enough to hold shape, but still shiny. Gradually add cornstarch mixture and beat well. Pile on filling so that it touches pastry all around. Bake at 350 degrees for about 20 minutes until lightly browned. |
