FRED'S FRIED RICE 
1/4 c. peanut oil (or vegetable oil)
2 c. cold cooked white rice
3 eggs, beaten
1/2 to 1 c. cold, cooked chicken, pork or any leftover meat
2 tbsp. soy sauce
1/8 tsp. pepper
3 green onions, with tops, sliced

Heat oil in large skillet or wok. In hot oil saute rice over medium heat, for 5 minutes, stirring constantly. Stir eggs into rice. Cook, stirring constantly, until eggs are cooked, about 3 minutes. Stir in meat, soy sauce and pepper, combine well. Garnish with green onions. 6 servings.
