CHINESE FRIED RICE 
1 1/2 c. rice
3 1/4 c. water or chicken broth
1/2 c. sliced green onions, tops also
2 tbsp. dry sherry or white wine
1/2 tsp. sugar
1/2 c. cooked pork, chicken or beef
1/4 c. cooked ham, cut in julienne strips
1 1/2 tsp. salt
3 tbsp. vegetable oil
2 eggs, beaten
2 tbsp. soy sauce
1/2 tsp. salt

Canned chicken works well.

Cook rice with water or broth. Chill thoroughly.

Heat 1/2 of oil in large skillet. Add eggs, cook 1 minute, stirring slightly. Remove from pan. Spread on flat plate in a thin layer and cool. Cut into long thin strips.

Add remaining oil to skillet and heat. Add onions and meats. Cook and stir just until heated. Add cold rice, stir well to coat rice. Stir in eggs and remaining ingredients. Heat thoroughly. Serves 8.
