COCONUT BUTTER BALLS 
1 c. butter
1/2 c. sugar
2 tsp. vanilla
2 c. all-purpose flour
1/4 tsp. salt
2 c. pecans or maraschino cherries
1 egg white
1 tbsp. water
3/4 c. flaked coconut

Mix butter, sugar and vanilla until fluffy. Blend in flour and salt; if dough is soft, chill. Shape a teaspoon dough around each nut or cherry to form 1 inch balls.

Beat egg whites and water. Dip dough in egg mixture, then in coconut. Bake on lightly greased baking sheet 15-18 minutes or until lightly browned. 350 degrees. Makes about 5 dozen cookies.
