KIDNEY BEAN CASSEROLE | |
2 cans dark kidney beans 1 c. cooked rice 2 (8 oz.) cans tomato sauce - may also use tomato paste 1 clove minced garlic 2 lbs. ground beef 1 lg. onion, sliced or chopped 1 can kernel corn (optional) Salt and pepper to taste Grated cheese (optional) Preheat oven to 350 degrees. Brown ground beef with onion and garlic. Drain off fat and water. Set aside. Cook rice. Set aside. Combine kidney beans (do not drain), rice, tomato sauces and ground beef, onion and garlic mixture. Add corn, if desired. Stir well. Place in large casserole dish and bake in 350 degree oven, covered, for 1 hour. Sprinkle with grated cheese if desired. Serves 4-6. |
