STEAK FAJITAS | |
1 1/2 lbs. round steak, cut into 1/2 inch strips 1/4 c. lime juice 1/4 c. tequila 2 tbsp. olive oil 2 Jalapeno OR 1 green pepper, sliced or chopped 1 lg. diced onion 1/2 tsp. garlic powder 1 tsp. salt 12 flour tortillas 1 c. chopped lettuce 1 tomato, diced 8 oz. shredded Cheddar cheese In a GLASS pan combine tequila, lime juice, olive oil, salt, garlic, peppers and 1/2 of the onion. Add steak, stirring until coated. Cover and marinate 1 to 2 hours, turning occasionally. Drain liquid. Fry meat, peppers, and onions in marinade until done. Serve on flour tortillas topped with onion, cheese, lettuce and tomatoes. |
