HOMEMADE GRAHAM CRACKERS
3/4 c. butter
1/2 c. brown sugar
3 c. graham or whole wheat flour
1 tsp. salt
1/2 tsp. baking powder
1/4 c. honey
1 tsp. vanilla
1/2 c. wheat germ
1 tsp. cinnamon
3/4 c. water

Mix well and chill for 1 hour or overnight. Divide dough in half and pat half on a lightly floured board into 1/2 inch thick rectangle. Place on lightly greased 12 x 15 inch cookie sheet and roll out with rolling pin until dough completely covers baking sheet and is 1/8 inch thick.

Trim edges with knife, cut dough into 3 inch squares with knife or pastry shell and prick each square 3 times with a fork. Bake in 325 degree oven until lightly browned (about 30 minutes). Cool on wire racks. Makes 40 crackers.
