SEAFOOD CASSEROLE | |
1 sm. pkg. Ritz crackers 1 stick butter 1 pkg. seafood legs 1/2 lb. bay scallops 2 cans cream of shrimp soup Any seafood can be substituted for seafood legs and scallops. Serves 8-12. May be cut in half and baked in smaller pan. Preheat oven at 350 degrees. Crush Ritz crackers. Melt butter. Mix crushed crackers and butter in large bowl. Place 1/2 of mixture in 13 x 9 inch pan. Press down flat with fork. Poach scallops in a little water until half cooked. Layer seafood legs and scallops on top of cracker mixture. Spread cream of shrimp soup on top of seafood. Place rest of cracker mixture on top and spread evenly. Bake for 45 minutes in 350 degree oven. |
