“RICE VELVET CREAM” IS IN:

RICE VELVET CREAM 
1 cup hot cooked rice
1 tablespoon gelatin
3 tablespoons cold water
2 tablespoons sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 cup cream, whipped

The rice should be cooked in milk for best flavor.

Soak gelatin in cold water for 5 minutes. Stir into hot, dry rice. Add sugar, salt and vanilla. Stir well for 1 minute until gelatin and sugar have dissolved. Allow to cool.

When cold, fold in whipped cream. Wet a decorate mold or plastic bowl with cold water and shake out the excess. Pour mixture into mold and chill for 2-3 hours or until set (or overnight).

Serve cold, drizzled with a fruit sauce, with preserved fruit or whipped cream. Some enjoy a sprinkling of maple or cinnamon sugar.
