CREAMED RICE 
Place 1 cup medium grain rice in a sauce pan along with:

2 cups water
1/2 teaspoon salt
1 tbsp butter

Bring to a boil, cover tightly and turn heat to low. Simmer over low heat until all of the water is absorbed. Remove from heat.

Add:

2 1/2 cups half and half or light cream
3/4 cup sugar
2 tea. vanilla
1/8 tea, freshly grated nutmeg

Return to heat and bring to a full boil. Remove from heat and cover. Let sit for 20-30 minutes (covered). Serve.

May also be served cold.

I am on a special diet and one of the items I could eat was creamed rice. I couldn't find it at the grocery story, so I looked on the internet. I came across this recipe. I can't have dairy products, so I used almond milk and deleted the vanilla. This is absolutely yumnmy! I have bookmarked this page for future reference and plan to share it with friends. I also can't use sugar, so I used stevia, using approximately 2/3 cup instead of 3/4 cup.
