SCOTTISH SHORTBREAD | |
1 1/4 c. all-purpose flour 3 tbsp. cornstarch 1/4 c. sugar 1/2 c. (1/4 lb.) firm butter, cut into pieces 1 tbsp. sugar Mix together flour, cornstarch and sugar. Rub in the butter with fingertips until crumbly and no large pieces remain. Gather mixture together into a ball, place in an ungreased 8 or 9 inch round baking pan. Press out firmly into an even layer. Make impressions with the fork around the edge and prick the surface evenly. |
